The ugliest but the utter most tastiest fish. John Dory is not a common round fish here people phase to be eaten, unless you favour seafood in general. But the predator is relatively available year round within our British waters. In fact it’s one of the favourites in my books (in joint place with gurnard). Filleted and marinaded in a miso paste is a very simple but subtle way of baking the fish which cooks in a matter of minutes. Added on a bed of rice, sided with cooked shredded red cabbage.
Serves 1 person
  • Marinading fish: 5 hours (min 2 hours) or leave overnight
  • Baking fish: 8-10mins

 

Ingredients

  • 1 x Fillet of John Dory

Marinade:

  • 2 x tbsp Mirin
  • 2 x tbsp Sushi Seasoning Vinegar (or use white wine vinegar)
  • 1 x tsp Granulated White Sugar (or caster sugar)
  • 1 x tbsp White Miso paste (marinade fish for 5 hours or 2 hours. Can be left overnight)
  • black pepper to season

Baking:

  • drizzle of vegetable oil for baking

For 1 Portion of Rice:

  • 100g x Short Grain White Rice
  • 200g/ml x Cold Water

Sides:

  • 1 x handful of sliced Red Cabbage
  • sprinkle of black sesame seeds (optional)
Method
  1. Mix the marinade ingredients together in a container. Using a sharp knife, slit 4-5 incisions on the fish skin fillet (prevents the fish from curling when cooking). Coat the fish fillet with the marinade all over. Leave in the air tight container and refrigerator for at least 5 hours.
  2. Preheat the oven to 185 ºC/Gas mark 4/350ºF. Preheat the hob/stove top to the highest heat setting.
  3. Wash rice until the water is translucent.
  4. Soak the rice for 10mins.
  5. Drain the soaked rice water. Add the rice and 200g/ml of water to a saucepan with a lid on top. Place the pan on the heated hob/stove top.
  6. Once reached boiling point. Turn the heat down to the lowest heat setting. Cook for a further 8-10mins (until water is absorbed).
  7. Set the rice pan aside. Leave to rest in the pan with the lid on. For 10-12mins.
  8. Boil the kettle. Place the marinaded John dory fillet on a baking tray with a drizzle of oil. Bake in the preheated oven for 8-10mins.
  9. Add the boiled hot water to a saucepan and add the red cabbage. Boil until softened.
  10.  Serve the cooked rice onto a plate. Add the cooked red cabbage and John Dory on top. Sprinkle with black sesame seeds.
