Dorayaki is a Japanese pancake consisting of two sandwiched together with a filling in between. Commonly, the azuki red bean paste is widely used in sweet confectionary products, particularly in the dorayaki. Conveniently for this version, I substituted the azuki red bean paste with a homemade ‘red kidney bean paste’ using tinned ones to be easier. With the options of a matcha cream filler, and of course the one and only NuTtTella.

Makes Approx 8 Dorayaki

Red Kidney Bean Paste Filler –(2 Dorayaki sandwiched)

Ingredients:

  • 100g x drained red kidney beans (tinned)
  • 25g x light brown sugar
  • 1 x tbsp cold water

Method:

  1. Preheat the hob/stovetop to a medium heat. Boil the kettle.
  2. Wash the red kidney beans. Add to a saucepan and place on the preheated hob. Pour in the hot water. Boil until softened.
  3. Add the cooked red kidney beans, water and sugar to a blender. Blitz until a smooth paste forms. (add more water to loosen if needed). Spoon the puree into a bowl. Refrigerate until cool.

Dorayaki Batter

Ingredients:

  • 4 x medium eggs
  • 100g x caster sugar (or granulated is fine)
  • 2 x tbsp clear honey
  • 3 x tbsp cold water
  • 200g x plain flour
  • 1 x tsp bicarbonate of soda (baking soda-stateside)

Method:

  1. Crack the eggs into a mixing bowl and whisk. Add the caster sugar, honey and water. Mix.
  2. Sieve the flour, add the bicarbonate of soda. Mix until combined. Set the batter aside and cover with a plate. Rest for 30mins.
  3. Preheat the hob/stovetop to a low/medium heat.
  4. Place a non-stick frying pan onto the preheated hob.
  5. Dab a cloth or kitchen roll into vegetable oil, coat around the frying pan, ensuring there is no excess oil. Allow to heat.
  6. Ladle (or use a jug to pour) the batter mixture into the centre of the pan. Allow to cook until bubbles form. Flip the dorayaki with a spatula. Cook for a further 2-3mins.- depending on your pan and temperature.

Matcha Cream Filler (2 Dorayaki sandwiched)

Ingredients: 

  • 1 x tbsp caster sugar (or granulated is fine)
  • 1 x tbsp thick double cream
  • 1/2 x tsp matcha powder

Method: Mix all the above ingredients together.
