A cheaper alternative than 'smashed avocado' on toast. Making use of frozen mukimame (edamame is the pod), defrosted and blitzed with greek natural yogurt, olive oil & seasoning. I've added lemon juice and garlic in other versions, for a more pungent flavour agent. The feta is also blended with olive oil, natural yogurt and seasoning. Both, piped onto sourdough toast, topped with tinned sardines, cherry tomatoes, radish slices, crispy mint leaves and lemon zest. Toasted sourdough toppings - minted mukimame, whipped feta, cherry tomatoes, crispy mint leaves & radish. 🌸🫰 Baked lemon sole, served with mascarpone, pecorino & lemon sauce, roasted cherry tomatoes & samphire. Cavatelli with Nduja, Mascarpone, Tarragon & Prawns. Smoked Mackerel Beet Tartare, with pea purée, crème fraiche, radish, cured soy mirin yolk, caramelised walnuts & pea shoots. Toasted Sourdough Topping Part 7 - Sardines with a roasted red pepper & walnut spread. Toasted Sourdough Part 6 - Smoked mackerel pate & pickled cucumber.
